What is an emulsion?

A light or airy fluid, a thick cream, rich balm, or even an occlusive ointment... Did you know? These are all emulsions! An emulsion is just the technical term for a milk or cream. An emulsion is an even mixture of two parts that do not mix together, like oil and water. One of the parts is dispersed in the other in the form of tiny microscopic droplets. The mixture remains stable thanks to a third ingredient, known as an emulsifier that is able to stabilize the interface between the two phases. Emulsions can also contain gelling agents, which increase the emulsion’s viscosity for more thickness, without increasing the fat content. Emulsions can be moisturising or nourishing, depending on their fat content. The best-known emulsion in everyday life is probably... mayonnaise! ?
